A Healthy Holiday Breakfast

This delicious zucchini quiche makes for an easy holiday breakfast with only four ingredients needed. Mix it together, pop it in the oven and get back to your holiday activities. An hour later, serve up this light vegetable quiche for a savory start to your holiday festivities.

Crustless Zucchini Quichequiche_S-(1)
Makes 6 to 8 Servings | Prep Time: 15 minutes | Cook Time: 1 hour


2 lbs zucchini
2 cups shredded cheddar cheese
2 eggs
1 ½ cups of milk
Salt and pepper

1. Heat oven to 375F.
2. Using a sharp knife, thinly slice the zucchini.
3. Sprinkle salt on zucchini slices, toss thoroughly with your fingers and let sit for 20-30 minutes.
4. Place zucchini slices in a cheesecloth and give them a good squeeze or pat with paper towels to remove the extra moisture.
5. In a mixing bowl, lightly beat the eggs with the milk. Season with salt and pepper.
6. Stir in 1 cup of shredded cheese.
7. In a quiche pan, arrange half of the drained zucchini slices and sprinkle ½ cup cheese on top of them.
8. Arrange a second layer of zucchini slices and pour the egg/milk mixture over them.
9. Top it with the remaining ½ cup of shredded cheddar cheese.
10. Bake quiche for about 50-60 minutes, until set and the top of the quiche is golden brown.
11. Remove from oven and serve warm or cold for a delicious holiday breakfast.
