A Healthy Recipe for the Whole Week

With a busy schedule, it’s hard to find time to prepare a healthy breakfast before running out the door. It’s easier to just reach for the convenient store muffin or leftover cake from yesterday’s office party. Stay on track with this protein-packed recipe that can be prepared the night before.

Mini Ham and Cheese Quinoa Cups (Makes 28 Mini Cups)
Grab one before you run out the door in the morning or bring for a little afternoon snack that you don’t have to feel guilty about.

2 cups cooked quinoa
2 eggs
2 egg whites
1 cup zucchini, shredded
1 cup shredded sharp cheddar cheese
½ cup diced ham
¼ cup parsley, chopped
2 tablespoons Parmesan cheese
2 green onions, sliced
Salt and pepper

Preheat oven to 350 degrees. Combine all ingredients in a large bowl and mix. Spray a mini muffin tin with non-stick spray. Spoon the quinoa mixture into each tin cup. Bake for 15-20 minutes, or until the edges of the cups are golden brown. Let cool for at least 5 minutes before removing the mini muffins from the tin.

Place baked cups on a baking sheet and freeze until solid, then transfer to a freezer bag. Microwave for 20-40 seconds depending on the number of mini muffins.
