Slow-Cooker Recipe: Chickpea Stew with Apricots and Turnip
Makes 6 Servings | Prep Time: 15 minutes | Total Time: 6 hours 15 minutes
19 oz can of chickpeas, drained and rinsed
28 oz can of crushed tomatoes
1 cup of apple juice
2 tablespoons of butter
1 medium onion, diced
2 garlic cloves, minced
1 cup of medium diced turnip
½ cup chopped dried apricots (about 12)
Zest of 1 large lemon
1 teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon salt
1. Combine all ingredients in a slow-cooker and stir to combine.
2. Cover and cook on low for six (6) hours, or on high for four (4) hours.
3. Check turnip for tenderness and taste stew for seasoning. Adjust salt if necessary.
4. Serve over brown or white rice, whole wheat couscous or quinoa.
